The reason a dehydrator works so well for us is two-fold. Firstly our digestive systems evolved long before we learnt how to cook, and perhaps most importantly. When we heat food above 118f / 47c this process alone destroys most of the nutritional value of our food and kills off all the live enzymes that are so important to our health and longevity. 
Why are living food enzymes so important?
A traditional chef will heat food to a temperature in excess of 100c to cook it, then by the time it's served it would be around 47c. With raw foods we may take the temperature up to 47c and then serve it with all its nutrients still intact, and very tasty it is too.
